Bagels are, indeed, a bit of work. But they are SO worth it! I pay bout $3.25 for a bag of King Arthur Flour here in San Antonio. The formula calls for right around two pounds, so $1.70-ish for flour. Figure another dollar for all the other ingredients and maybe $1 for electricity, and you've got 24 bagels for under $4. Bagels are 79-cents to a dollar in bakeries here. EACH! And they're huge, a heavy hitter on the waistline. Who wants to eat half a bagel? The frozen ones are smaller but... ew.

Aren't bagels about the most gratifying thing you can bake? I am always entranced by the boiling process. These look incredible and I love the sensible size.

Nice photos and great baking along with you,

I'm really trying to get back to watching what I eat - so HARD when you're into baking!!! I was really glad to see the figures that A Cook's Book gave me for the nutritional info! I sent half of them to work with my husband, and a lot of people were VERY glad to see a "normal" size bagel for a change.

The next challenge is brioche. OY! I'm going with the poor man's brioche, I think, and only doing half or quarter recipe so we don't have it sitting around the house. They had the little mini-pans at Bed Bath and Beyond for 59 cents each for the "small" and 29 cents for the "tiny" so at least I can pre-portion them!

They look glorious! I must get on the BBA bandwagon pronto cause I'm missing out. I love bagels - but not the 600 calorie over-the-top variety (which frankly are the only kind available anymore). Making your own = having your bread and eating it too. Great post!
